Yeah, especially when they have to pay rent, employee salaries, etc. At the end of they day, I think they just need to physically move more units to survive. Although I've lived in Southern California for 35-years, I'm not native to this region of the country. Earlier this year I had my first meal at In-And-Out, actually during a ride with @noisycarlos, @Stan Onymous, and @Jrkline "Wheel Whisperer". Then again, I rarely eat burgers, so when I do, I want it to be the best burger I've ever eaten (or close). Sometimes, certain topics elicit a dihorea of writing from me, apologies in advance, In-N-Out burgers seem to be one of those topics. Hold tight kids, it's story time! It was the first place we went when we touched down in SFO last time, our friends picked us up and Matt took us through an in-n-out drive through on the way home. He knew fastfood and burgers in particular were my weak spot and wanted to show off his local joint. I was feeling average from the pre honeymoon drinks before we boarded the plane 12hrs ago and a average flight with a demonic baby (babies man... why?!) but am always down for a feed. It was a holy experiance. And by that, I mean holy shit, turn around I want another one. My wife was not impressed, I didn't give a shit. Matt thought it was hilarious. My visits to this burger heaven was oft repeated during that leg of our honeymoon trip and by the time we left I had gained 6kg. Disappointingly I found there was no vendors by the time we hit New York, but being the fat man at heart I am I quickly found solace in dirty water dogs and pizza by the slice, by the slice, by the slice... The dumplings in China Town, the BBQ down in Brooklyn and holy shit, the bacon. I was ruined for a lot of food by the time we left the states. I thought our bacon was OK here in NZ. Its not. The Dominican Republic had no such fare, but the rum was all we required lazing by the beach haggling with street merchants. When we got back to the states on the 3hr layover before flying back home I hunted down the local Maccas in the airport hoping to get that last hit of American mouth magic again, but I wish I didn't. It was cheap cardboard slathered in wilted nasty. Why god?! Our McDs is actually decent here! A big mac with quarter pounder patties and extra mac sauce is a good kai. Anyway.. On the flight home I homeworked the receipe, technique and ingredients required to replicate this foreign gem for all my soon to be astounded friends, something akin to those British explorers of old returning from India, bags full with fancy spices and... stuff to regail astounded crowds of commoners. I would be hailed a culinary hero, maybe.. Surely. 65ish percent lean prime beef, I had to grind it myself to get the right mix of fat, that meant buying a grinder, my wife let me indulge this new passion knowing the gadgets she would get out of the endeavour along the way. Chunky grind on the meat mixing the fat well among the way, not too fine and seasoned well. Quarter pound patties, and this is important, fried in mustard. It adds a tang. Proper American cheese, (but I couldn't find it so had to use local variety) and caramelised onions. Fresh iceberg lettace, some more onion and thousand island type dressing (i forget the exact receipe now, but I made it). No devil's tomato here. The date was set and I made like 60 patties to fry up, I bought a new bbq and invited the coolest kids over to hang and tell me how I was feeding them something from gods kitchen, how cultured i obviously was and how jealous they were of my secret burger receipe. Which is largely how it went.. But to my taste buds I could tell the difference. My friends vainly tried to reassure me. My burgers were amazing, bloody fantastic even they said. But how could they know? They hadn't reached perfection. They hadn't French kissed the goo god. Gurgled the melted cheese like one of the girls in those videos.. I tried variation after variation scrambling like a junkie for that particular high again, but no matter what it was, I couldn't find the same warm tounge hugging gooey goodness I had experienced at the start of that trip. And now I yearn, I yearn hard for another taste, another bite, another sweet hit of double double animal style love.
