As long as your pedals don't dip too far forward when you accelerate. If it wasn't too wide stepping off and on seems doable just slightly harder. If I was you I would just get something solid, lighter than plywood but a thin board would be okay I imagine, and lay it across your pedals flat with a rug on top. I have thought about this a lot of times as a Halloween thing. I always came to the conclusion that a cloud would be easier as a floating costume theme because I could cover the top of the wheel and make it poofy. I might go do this right now. Given how quick EUCs react to small angular changes, I can't even imagine how to get on the thing, let alone ride it. You'd practically work with maximum acceleration/deceleration all the time.
