I think there's a couple of ways people carve. I carve like a skier.

Ride over a straight line with knees slightly bent. While keeping your hips and shoulders above the line, turn your feet to make very shallow turns to either side of the line. Gradually make the turns wider while keeping your hips and shoulders directly over the line.

From the back, mid turn you should look like this:

So it's all in the ankles?

I wish there was a good instruction video for carving.  I've seen it discussed but not an actual tutorial.

ride in a strait line - turn shlders slightly - wheel will follow - then turn shlders other side etc. this will cause light carving. there is a bunch of stuff hppning with weight shift but much easier to intuit by practice. to go from light to aggressive imagine u r making a more aggressive turn at speed. then follow with aggressive turn in opposite direction ad infinitum - so u r going along tracing S curves endlessly linked. slalom skiing is closest related activity and quite similar. more aggressive carving induces more roll in wheel and limits speed somewhat so u can find a sweetspot that comes down to personal pref. carving on loose surfaces (trails etc) can lead to wipeouts since while carving some force has a sideways component ( not just downwards ) and the wheel can slide out from under u.
