FLJ T113 conversion advise

Hi Guys,

 I have a FLJ T113 which im reasonably happy with, it has a 35AH 60V battery as well as 2 x 1600W motors.
There is also 2 x 37A controllers on it as well as a Turbo button.
However, considering that its considered illegal here due to its max speed i'm looking to scale down
the speed on it. I do however not want to lose any(much) torque.

From my research it seems that a lot of these things are mostly commodity parts.
So what i'd like to do is the following:

Replace the accelerator with ideally something that is a bit easier to use, perhaps a push down button like on some of the lower end scooters and
a programmable speed controller (Im guessing this is part of the display/control part?)

So, wish list is really:

• An easier way to accelerate , such as either a twist controller like on citycoco/scooters or a push down button like on lower end devices such as xiaomi
• Enforce top speed of no more than 22 kmh using bluetooth or something
• Still use both motors and have most of the force available even if it stops pushing further when its reached its top speed.

So , any ideas on where to start?
