Typically, I wouldn't even consider this but I do deliveries and all my vehicles are currently down and I need to work while I fix my other vehicles.

The axle bolt missing is one from the Sherman Max (well, the bolt is not missing, but more like stuck until I weld a nut held on it to get it out). Each axle has 3 bolts per side in a triangle formation. I'm thinking it might be OK for a day but feel free to tell me how bad of an idea this might be. I'm considering it...

Bad idea, 2 bolts is not still 2/3 as strong it's more like 1/3 and any jarring impact (pothole etc.) could easily snap the other 2. My 2 cents.

I own an Abrams, and I am familiar with the strength of the bolt and axle.

The axle is steel, and is of a large diameter for euc standards.

The size of the bolt is large too. Those bolts can easily take on 1/2" drive breaker bars. 

For myself, I would consider riding my Abrams around town for a day if I take it easy on two out of three axle bolts.

I don't own a Sherman Max, but I have seen pictures. 

It seem the axle design is similar. Compare your axle design to the Abrams.

I just watched a teardown video on the Sherman Max by ecodrift-life.

There is a recess in the pedal hanger that the end of the axle go into. So the pedal hanger itself can handle the shear stresses itself directly.

It doesn't look that bad to me for a day on a easy-going ride.

But ultimately, you are exposing your to more risks.

Also, should you decide to do it, don't take on more risks and keep riding it after a day.

They put in three big bolts for a reason.

the local bike shop fixed my mechanical bike within 10 minutes -- i thought it'd be a much bigger problem than it was. So i'll use that in the meantime
