Bypassing gyro- Motor+controller repurposed for other applications

Greetings.
TLDR; How to make the wheel go without tilting it?

Idea: Making OpenSource plug&play modules from old EUC. To use in anything that needs to go.
Problem: I'd like to repurpose an old EUC but cant seem to make it run on with just a button for on/off.

Specs:

Motor: QJ60V350W. 3 wires for power. 3 windings that each have their inner lead connected (Y connectinon)
Controlboard: 6 FET P7N75&, INVENSENSE MPU-6050 six-axis Gyro+accelerom (MEMS MotionTracking)
Powersupply: 60V DC (from 240V using simple trafo and rectifier)
Microcontroller on the controllerboard: STM32 F103C8T6

Plan: To have a switch on/off/slow for driving this EUC motor with original board in a bench-setting. Running on 240V from the wall.

Progress: Tried with generic ebike controller to check if wheel can run allright on low speeds with medium load from diy poweradapter.

I can connect power and make it work like normal with tiltsensor etc. but I want to have direct control without gyro.

Basically I want to convert a few EUC to simple plug&play drivemodules for all uses and this is the first step.
